Miso Marinated Chilean Sea Bass

This one is really easy, cribbed from a bunch of sources including Kenji.
Ingredients
- Costco package of Chilean Sea Bass fillet (2 fillets - maybe 1.5lbs?)
- 1/4 cup miso paste
- 1/4 cup sake
- 2 tb mirin
- 2 tsp soy sauce
- 1 tb oil
- 1/4 cup sugar
Steps
- Combine all of the non-fish ingredients, give a good mix.
- Put fish into bag, pour in marinade, massage marinade on fish
- Put in fridge 1-2 days
- Set broiler to high, arrange rack 6" from heating elements
- Place fish on aluminum-foil-covered baking pans - pour a little marinade on the fish. Rest can be cooked in a pot and used as sauce.
- Broil for approx 12 mins, 135 degrees internal or flaky fish. May need to move pieces around to cook evenly - I put them on two quarter pans so I can adjust them. Undercook at your own peril - it can be yummy and interesting fatty texture but I have no idea if is safe.
